I Made It Monday (Or We Now Return To Our Regularly Scheduled Program)

For those of you who have recently joined my legion of minions...um...followers...I had been doing a regular Monday post called, "I Made It Monday." I'm a crafter and a professional chef (at least in my mind and according to my kids) but that isn't the only thing I am. That being the case, I do like to occasionally display with pride my creations. Most people refer to this as bragging and I do that too. But I'm totally modest about it.

Before I show off my accomplishments for the week, let's talk for a second or two about Pinterest. How many of you have a Pinterest account? I bet it's a bunch. Pinterest is the coolest thing since hot glue. Would it astound you to know that I do not have a Pinterest account? Well I don't because I already spend too much time lurking about on the internet wasting time that I should be spending in productive activity.

But every once and a while, I'll scroll through the Pinterest front page just taking a gander at what's there. I mean I am a crafter and a would-be chef so I should always look to expand my horizons and talent, right? The only problem is that each time I visit Pinterest I find myself feeling more and more inadequate. Interestingly enough, I am not alone in this feeling. A recent news article talks about how moms are feeling stressed out by the amazing things they see on Pinterest and like me feel bad about how perfect everyone else's life seems.

So last week I was perusing Pinterest and low and behold I found two recipes that looked really fantastic. The first was for a zesty shrimp and avocado salad and the second for something called "magic cake."

Now I won't print the recipes here because of copyright and all that but I think this is the original site for the salad. With the salad I was a bit hesitant to try it because it called for a bunch of things that I just don't like all that much like red onion and cilantro. And to be honest, I'm not the biggest fan of avocado but I have had it and enjoyed it in sushi and on a sandwich. But the photo looked so amazing and I really love lime and I'm on a low carb diet (which is working nicely, thank you) and this salad seemed just the thing to change up what I had been eating.

So I replaced the onion with cucumber and the jalapeno with bell pepper (in the hopes the kids would be more willing to try it) and left out the cilantro. Looks pretty, right?

I hated it. It made me want to puke. I brought a small one cup serving with me to work the other night and as I ate it, I hated it more and more. I didn't even finish half of it. I'm not sure why. Maybe all of the replacements I made turned it into a disaster, but all of the ingredients separately I like just fine. Together? UGH!

After that fiasco I was really, really nervous to try the magic cake. Magic cake is all over Pinterest like glitter and there are so many rave reviews about it. What could be the harm here? A cake that magically separates into three different layers as it cooks, sounds pretty neat to me. I got the recipe from JoCooks but you can Google it and about 14 quadrillion recipes for it will pop up. It was a simple recipe with ingredients that I had - so no special trip to the store on a non-shopping day - and it looked pretty sprinkled with powdered sugar.

First of all the batter is so thin it might as well be instant pudding. As I was mixing it during the last stage, it started separating in the bowl and there were chunky bits floating around. I had my doubts, let me tell you. But I was making it for my gaming group and only had an hour before they arrived, so I knew it was too late to bail on a new recipe in favor for a more familiar one.

I wish I had taken photos of the process, because it was a seriously creepy batter. It smelled good as it was baking and when I took it out, it looked...done.


From this angle it's hard to tell, but it did indeed separate into three layers: a bottom rubbery crust, a middle custardy filling, and top cake-like consistency. Instead of just powdered sugar I opted to dust it with a bit of cocoa powder which actually helped cut down the intense sweetness of it. The guys liked it and honestly, it wasn't a bad cake it just wasn't magical enough for me, it was just kind of...meh. I will say though, that on a second try, after it had sat in the fridge overnight and didn't have anything sprinkled on it, I liked it a bit better. I think it would benefit from a sauce and more vanilla.

One of the guys suggested a sprinkle of vanilla sugar and I would have to agree that vanilla sugar would make a nice addition to the cake and to my kitchen!

I Made It Monday

So long story short. Last week was one just plain forgotten. Girl Scout camping was okay but the car breaking down in the middle of No Freaking Where was decidedly not fun, especially when the battery on my phone was going, we were hungry, tired and grungy AND I as a girl (if you know what I mean). Then a week of illness. A head cold got Cyra and stomach bug hit me mighty hard. All that equaled a big "Piss Off" to the world. Which was okay because it was clearly needed. On my end. Not the world's.

Anyhow, After a week of nothing and finally feeling better, I went about this weekend like a prisoner after doing twenty years for a parking ticket. Saturday I tackled the lawn and realized that despite Scott's assurance that I don't need a machete for the Zombie Apocalypse, I most certainly need one for the lawn! Then I spent Sunday baking.

Oh yes, my friends, I give you plenty of warning, this is a yummy I Made It Monday. I give to you:

Battle of the Beer Breads

I've been wanting to make beer bread for a while now and finally found some motivation. It could have been the sheer amount of beer crowding my refridgorator. Or maybe the...nope. It was pretty much all the beer in the house. Now, fair and honest here, I do not drink beer. I don't like it. Never have. Give me whiskey, rum, Bailey's! Scott, however is a big fan of beer - it's his job, you see, so we often have a good deal of it around. 

Beer bread is another matter altogether and I do like it. So, this is what I had sitting in the fridge:

Budweiser, Shock Top End of the World Midnight Wheat, Goose Island India Pale Ale, and Murphy's Stout
And wouldn't you know it I happened to find a whole slew of recipes online for beer bread. For simplicity's sake, I'm not going to upload a gazillion photos of batter and individual loaves. I'll focus on the ingredients and show the end results altogether at the...you know...end.

First up, the Shock Top. This beer, clearly for the December 22nd apocalypse, has been around the longest and needed to be used up. I really wanted to actually try drinking it with it's hint of chocolate, chili and other spices, but I just never got around to it. I found this recipe, at Tasty Kitchen, made with a touch of honey that I thought would compliment the Shock Top nicely.

This was an easy recipe to put together. And Holy Moly! Melted butter! The butter was poured over the batter once it was in the loaf pan. I'd never seen that done before and I had my doubts, but man! did it turn out pretty.

Next, I went with the Murphy's Stout. I found a recipe on TheKitchn for a Cheddar and Chive Guinness Bread that looked like it would be delicious. Again with the melted butter! So much butter! Many of the recipes I looked at called for drenching the batter in butter. Who am I to argue with butter?

Ingredients: Flour, sugar...blah blah blah, cheddar cheese and chives!
For the last two loaves I used the same basic recipe I found on FarmGirlFare. Now her actual recipe is for a dill and cheddar beer bread, but she gives instructions for just a basic loaf. I used the India Pale Ale alone for one loaf and then for the loaf I made with the Bud, I threw in a packet of Ranch seasoning.

Cast: blah blah blah BEER! Could it be any simpler?

Rinse and Repeat. No wait! That's shampoo.

Out of all the recipes I tried, the last one is the easiest to throw together and the quickest cooking. Although, honestly I found that pretty much all the recipes are alike in the basic ingredients and the variations come with the extra seasonings and spices. FarmGirlFare offers a variety of flavors to try.

Now for the reveal:

By far I think my favorite was the Honey Beer Bread with the Shock Top. It's a bit sweeter and with just a hint of the chocolate and chili it could almost pass for a heavy cake. It could have used a touch more honey, I think, and a little less butter. The girls also preferred this loaf.


The Murphy's Cheddar and Chive was I think had the most powerful beer flavor come through. It's very hearty and I thought it could do with a bit more cheese and possibly some oats or nuts or seeds. This was Scott's favorite.


Out of all the breads, the India Pale Ale was kind of boring. There wasn't any punch, any zing, any pizzazz like the others to compliment the hoppyness of the beer. Also, it was very crumbly and the lightest of the four loaves. The girls didn't favor this one at all!


The Budweiser Ranch bread needed something more. Maybe some cheese, I'm not sure. Thinking about it, maybe it was the recipe itself because both the IPA and the Bud followed the same recipe and both ended up feeling incomplete. I like the lightness of the bread as compared with the denser loaves, it just needs something to punch up the flavor a tad.


All in all, I'd say it was an overall success. I think in general I have learned two very important things: first, all beer bread recipes are pretty much the same and very simple which means there is a lot of wiggle room to improvise and devise my own recipe; and two, the darker the beer, the better the beer bread.

I also, because I'm crazy and was clearly on some sort of bread making trip, made a loaf of Irish Soda Bread which turned out so delightfully good that I'm going to need to make another loaf ASAP, because this one won't last for more than a day!

Photo A Day - Grateful

As I spent yesterday and this morning in the kitchen, struggling to cook while dizzy on pain killers (don't worry, my girls helped me out a lot!) I thought about what photo I'd use for today. But then I realized in a moment of clarity (or as the pain meds were wearing off) I might not be able to post a photo here (Oh Blogger how you disappoint me!) but I probably wouldn't have posted a photo today anyway because I don't do people photos here all that much.

And that, my friends, is what I am grateful for: people.

Amidst the potatoes, pies and turkey, I knew that even if I hadn't a single thing to put on the table today except a bowl of cold gruel, I would still be grateful because of the people I have in my life.  By nature, I am a people person. I like to pretend otherwise, but I really am. I like having people around me and with me. I like sharing my experiences with my friends and family. People make each day fuller especially when they are people you love. And I love me some amazing people!

Today as many gather around the dining room table to celebrate a completely made up holiday I am grateful for:

My Friends - Sara, Natasha, Amanda and Ericka. BFFs who've shared with me good times and bad, dreams and disappointments, celebrations, quiet times and adventures.

My Family - My Mom and Dad, my sister, who at the drop of a hat will be by my side if I need her, my brothers who grew up watching over me and protecting me even as I tried my hardest to annoy them, my extended family that I don't get to see very much but when I do it is as if no time has passed by and the family I married into, the strangers who opened their homes, hearts and worlds to me simply because I married Scott.

My Husband - We have been together for half my life and I can't imagine anyone else I'd want to share my love and life with. He loves me in spite and despite all of my flaws and idiosyncrasies. He makes me feel beautiful on days when I feel ugly, he holds me when I am sad or scared and he dedicates his life to making mine wonderful.

My Girls - If there is a center to my universe it is clearly my girls.  I am beyond grateful to have two compassionate, intelligent, playful and beautiful girls. From the very second I knew I was carrying them I loved them unconditionally. They make my world better. They make me a better person. They make me who I am.

Photo A Day - 5 o'clock

It was left up to us to decide if today's prompt meant AM or PM. I choose to go with AM knowing that at 5pm tonight, I'll be at the dentist for the girl's check-up and I'm am uncomfortable posting photos of them and others (as I've mentioned before).

So 5 am it is then. Except this is more like almost 6 am. I was up most of the night with severe tooth pain and I finally dozed off right before 5...so I sort of missed the whole 5am part. I need major dental work. I mean major! And I keep putting it off, not because we don't have insurance, we do, but I am slightly* terrified of dentists and hugely embarrassed that I let my teeth get so bad.

So here is my sort-of close to 5am. I mean it's 5 am in the central part of the country, so that counts. Right?

Breakfast time = Pancake Monday!

Yay! My tea is nearly ready.

Earl Grey. Hot. And also with some sugar (sorry Capt. Picard, I like sweet tea!)

Back to pancaking. Mix. Mix. Mix. Sure it could go faster with an electric mixer, but I like hand beating. Good stress relief.

  
And the first cakes go on the griddle. The first ones always end up looking funny. I leave those for Scott to eat.

*make sure you understand that by "slightly" I mean so completely freaked out I often have nightmares about dentists and break out in a cold sweat when I bring the girls to their appointments - which by the way I am obsessive about because I'll be damned if I let happen to their teeth what I let happen to mine!

Photo A Day - Breakfast

For the past year I've been very frugal with our food budget - alright as frugal as I can possibly be which is to say some months I'm better than others. I cut out as many processed foods as I could which sadly included cereal and bread. Although I occasionally add a box or two of cereal and a couple of bags of bread to the grocery cart, more often than not breakfasts around here include oatmeal, pancakes, eggs and shakes. I make most things from scratch now which benefits us on two levels: better food choices and a smaller grocery bill.

When we have sliced store bought bread I love making eggs in a basket. Cute, convienent and delicious, this is my favorite way to eat over easy eggs.

So pretty and yellow! Yellow makes me happy in the morning.

Mmmm...toasty! We use the cuts outs to dunk in the yolk.

A dash of salt and a sprinkle of pepper and I am good to go!

Photo A Day - Starts With A "C"

It's gotten a bit chilly here and that's unusual for Florida this time of year. Aside from hammering the northeast with nastiness, Sandy has pulled some nice crisp arctic air into the sunshine state and I for one love it. Thanks to the cold snap I've been able to indulge early in a deep winter tradition: a hot cocoa nightcap. I've been obsessed with Swiss Miss Caramel. Seriously. I bought two boxes at the store last week and I'm nearly done with them!

Check out my triple "starts with a c" action: Caramel Cocoa in a Cup! Heck! Let's throw in Counter as well since that is where is it sitting.

I have a facebook page but I don't use it all that much and I am uninterested in posting to instagram or twitter because aside for the fact that I don't have accounts with them, I am anti social media-ing more than I already do. Tis the Season



November is pressing down upon me and as my busiest month of the year I am not exactly looking forward to it in the traditional sense. Actually, I’m kinda freaked out about the whole thing.

November brings NaNoWriMo, a writing challenge that I have participated in since 2004. In past years I’ve run the gamut of writing: planning, note cards, winging it, basic ideas, just a character. I’ve done it all. This year is the first year I haven’t had a direction before October hit. In fact, I just got my ideas together and drafted a nearly naked plot with a few hazy characters. The years I’ve planned I’ve done better but I’m hopeful that I’ll continue my winning streak.

November also brings a last ditch frenzied approach to finishing craft projects for Christmas. As usual I have set myself very high craft goals and then there was the incident earlier this month that accidentally ruined three projects that were near completion. So I’m restarting three projects, continuing two more and trying to find the time for a good half dozen not even started yet.

November is also Cyra’s birthday month. In previous years we've gone camping, thrown small parties, had a simple dinner. This year? It’s bowling. We haven’t established if it will be a bowling party or just us bowling for fun. Either way it will be fun. She’s a whole decade old this year. It seems hard to believe. I cleaned out my closet last week and pulled out the girls’ baby boxes. I love how amazing they are, what wonderful people they are turning out to be but, still, I miss them as babies.

If I have a second favorite holiday, it is the completely made-up Thanksgiving feast. I love to cook and bake and it's like Thanksgiving was created just to enable my cooking obsession. Thanksgiving is often treated as a week long event in my house. I bake far too many desserts, way too many side dishes and a turkey three times larger than we actually have need for. I think the largest group of people I’ve fed in recent years was maybe ten. Typically there are six or seven.  But that doesn’t stop me from cooking as though I was feeding twenty-seven! This year might be slightly different as we certainly don’t have the budget for a proper feast.

Knowing myself as I do, I doubt that I will be writing much for the blog and that distresses me. I have let myself get out of the good habits of regular blogging and commenting and so of course I want to rededicate myself to daily postings. With all my focus on NaNo and crafting, I think I will once again participate in fatmumslim’s Photo-A-Day for November.

Tis the season alright! Season of crazy. Season of fun. Season of self-induced stress. I work best under pressure and deadlines. If I don’t have one or the other I tend to be lazy and self-indulgent.

I Made It Monday - Tuesday Edition



Recently, in an effort to minimize the amount of time I spend in the kitchen, I’ve been researching OAMC (or Once A Month Cooking) and Crock Pot Freezer Cooking. Now this isn’t to say that I hate being in the kitchen. I don’t. I love cooking and baking and making. The problem is I quite often end up busy in the late afternoon running around with the girls or errands or crafting and then it is too late to actually make anything. 

Also, I forget to take things out to thaw.

Plus, guess what’s coming up in nine days? NaNoWriMo! And of course once November hits, everyone is on their own for food, laundry and attention. Having a bunch of prepped meals will make November run just a bit smoother.

I wonder if I can pre-cook Thanksgiving?

In any event, this will probably be a thing now. Six hours of prep, five recipes and at least nine meals clearly equal a win (although I only doubled one recipe, the way they are packed and frozen one bag would be one meal with no leftovers). The only minor drawback of prepping so many meals in advance is storage of said meals.

Up until about a month ago I had a freezer that we bought from a friend which worked fantastic. Sure it was older but it was wonderful! I hadn’t even gotten it stuffed full yet when disaster struck. Because we had to keep it outside on the screened patio (yup) the poor thing worked really hard keeping everything cold until it just couldn’t anymore and blew up.

Alright. Fine. It didn’t technically explode but it made a pop pop popping and then smoke started billowing from the vent. Luckily I was home. Even more luckily, I was out on the patio at the time so I was able to unplug it and stash all of the food in the regular freezer. We’ve been looking at getting another one but smaller to fit it inside…but with only 1300 square feet floor space is at a premium. So while I wanted to prep a few more recipes, I only made what I figured would fit.

 Once the veggies are prepped then it's on to the meat prep and assembly.

Just to give you an idea, this is one recipe divided into two one-gallon ziploc bags. So while technically one would cook these both together, it is possible to cook one at a time and not have to deal with leftovers - which in my case would be good since somehow leftovers often get shoved to the back of the fridge and neglected. Poor, poor leftovers!


And here is my tiny freezer neatly stuffed with prepped food. Five recipes fit nicely although I'm sure I could have squeezed in one more if I tried.


And, of course, the aftermath. Well, some of the aftermath. Scott was very nice to help clean up as I was finishing up the last of the recipes so what you are not seeing is all of the cutting boards, the stuff still on the floor (mostly canned goods that will be used in other non-prepped meals) and the multitude of dirty bowls.

March Photo A Day - Trash

This was a really hard challenge. I mean who in their right mind wants to see trash? How can I make trash - my trash - interesting and artistic?


I drink Earl Grey Tea like I own stock in the company, like I have my own East India Shipping line, like I am British. There is nothing that a good cup of tea can't fix. Except maybe appendicitis, but I'm not sure as my appendix hasn't wanted to leave yet. A long time ago, I used to drink regular Lipton with milk and sugar, but once I discovered Earl Gray, I was hooked. I take it with sugar and that's it. By the end of the day (especially now that I am home all the time) there is a little pile of tea bag wrappers sitting on the counter. Not that I'm too lazy to throw them out, but it is the only way for me to keep track of how much tea I am actually drinking! I have to ration, you know, since a box is wicked expensive. Let me tell you, if the colonists had Earl Grey, that little Tea Party of theirs would never have happened. They would have been all, "What? Throw my Earl Grey into Boston Harbor? Are you mad? Do you know how delicious this shit is? Let's just stay colonists. No biggie!"

I Made It Monday

Guess what I did with my sour oranges!

Oranges, canning supplies, cheesecloth...coffee? Vodka? How'd those get in there?

peel from about 4 oranges (chopped), 1/3 cup sugar, 3 cups vodka

peel from about 4 oranges (chopped), 1.5 cups Smirnoff Strawberry and 1.5 cups Smirnoff plain vodka

Now for the wait. Each jar must age for at least three months according to the recipe I used. So, I'll let you know how they turned out in June.

These Are Not The Macaroons You Are Looking For

Recently, I felt the sudden irrepressible urge to bake. It happens occasionally. I was low on supplies so flipping through my Better Homes and Gardens cookbook, I settled on making coconut macaroons. Four ingredients: sugar, egg whites, vanilla extract and coconut all hung out in my kitchen, lazing around with bored expressions.

Macaroons are simple I thought, easy and won’t take up the whole afternoon. Oh how little did I realize that apparently macaroons are the high maintenance snobs of the cookie world!

The recipe read a bit like meringues but without the cream of tarter. Add sugar slowly and beat egg whites until stiff peaks form the recipe said. But it should actually have read: Add sugar if you want to and beat the egg whites forever until your arm loses feeling and falls off. Then get pissed off at the egg whites and add a teaspoon of cream of tarter to see if that helps any.

It didn’t help. The cream of tarter? Nope. Nothing. No stiff peaks at all. After about 40 minutes of beating, I finally walked away from the bowl afraid that my little hand held electric beater was going to resign. I came back a few minutes later, dumped in the coconut and told the batter to “get over it.”

The egg whites took their revenge on me though and while I was folding in the coconut, they fizzled, deflated and sunk.

“I am cooking you, stupid cookies!” I yelled at the bowl. This was personal now. The batter was just taunting me now. “I will bake you and eat you! I don’t care how you taste!”
